First Brazilian Artisanal Raw Milk Cheese Symposium to take place this week, November 23-25, 2011, in Fortaleza, Ceará, Brazil, draws high expectations with its diverse programming of activities assembling a wide variety of experts, producers, supporters—from local cheese makers and entrepreneurs to agricultural and sanitary technicians to film makers and international representatives.
Organized by Embrapa Agroindústria Tropical and Emater/RS, Brazilian agricultural research and technical assistance institutes, the event that aims to discuss aspects of quality, safety and certification of artisanal cheeses, as well as promote the continuity and valuing of small producers and Brazilian artisanal cheeses locally and internationally, counts on the presence of supporters NGO SerTãoBras and Slow Food Foundation for Biodiversity.
